Garlic & Ginger Fried Beans with Wild Mushrooms and Pork

Adrian sneaks some pork into this traditionally vegetarian Chinese dish.


  • 500 gms long green beans

  • 3 cloves ginger, sliced thinly

  • 4 cloves garlic, roughly chopped

  • 1 long red chilli, sliced

  • ¼ cup vegetable oil

  • 500 gms coarsely minced pork

  • 1 tbs soy sauce

  • 1 tbs ketjap mannis

  • ¼ teaspoon sesame oil

  • 3 cups mixed mushrooms

  • ½ cup coriander roughly chopped

  • ½ cup spring onion thinly sliced

  • ½ cup garlic chives, chopped

  • 1 tbs toasted sesame seeds


  • 1.

    Heat vegetable oil in a frying pan over a medium to high heat. Add beans and fry for 4 to 5 minutes or until blistered and soft. Set aside.

    Add sesame oil, garlic, ginger, chilli and mushrooms to the frying pan. Cook for a few minutes until fragrant and mushrooms begin to colour. Add pork mince and continue to fry until pork is golden. Add spring onions, garlic chives and the fried beans. Pour in soy sauce and ketjap. Stir through coriander and remove from heat.

    Sprinkle over sesame seeds and serve with steamed rice.
