Seared Beef With Organic Beets, Horseradish, Crème Fraiche & Chives


Serves 4

Ingredients

  • 4 Beef Sirloins 400 grams each
  • 16 small beetroot a mix of red, target & golden
  • 20 g Fresh Horseradish Peeled & grated
  • 200 ml crème fraiche from Isigny, it must be this brand from France
  • 1 teaspoon Dijon mustard
  • 1 packet Fresh Rocket
  • 4 Cloves Garlic
  • 2 sprigs Thyme leaves
  • 1 bunch asparagus
  • Olive Oil Extra virgin Lakelands from Mudgee if possible
  • 3 Lemons 2 lemons cut in ½ for decoration
  • Salt Flakes
  • Freshly ground Black pepper

Method

  1. Pick the thyme by removing all the leaves from the stems. Chop the leaves finely and rub over the sirloin.
  2. Heavily season the steaks with salt & pepper.
  3. In a griddle or frying pan brown the meat all over for approximately 5 – 8 minutes on each side until it is brown and crusty on the outside, allow to rest & serve medium rare.
  4. Scrub the beets and place them whole in a roasting tin with the whole cloves of garlic, drizzle a good splash of olive oil over the beets, season with salt & pepper. Cover with tin foil and roast in the oven heated at 180c for about 20-30 minutes until they are cooked & tender. The beets are ready when you can stick a knife in them and are soft.
  5. Dress the beetroots with a drizzle of olive oil, freshly squeezed lemon, salt & pepper.
  6. Roast the asparagus in a little olive oil till cooked.
  7. Finely grate the horseradish. Mix with the crème fraiche, mustard and a pinch of freshly ground black pepper.
  8. Slice the beef and arrange it on a plate.
  9. Arrange the beetroots and asparagus on top and drizzle with olive oil & a squeeze of lemon.
  10. Drizzle the horseradish & crème fraiche dressing over the sirloin & beets, arrange some rocket leaves on top, sprinkle with chives & serve with ½ lemons.

    I made this a few weeks ago and i loved the horseradish sauce. I really like the addition of the creme fraiche as i have only tasted the versions with sour cream and mayo. This one was a lot better. My family loved the relish and i thought it also very tasty and i am not a big beetroot eater.

    am going to give it a try...noticed that in the recipe it says to keep the beet whole, whilst on the TV show it showed them being pureed!!
