Mix flour, sugar, salt, butter and yeast adding lukewarm water slowly for 5min.
Add olive oil and knead 2min.
Shape and prove 5min grind over a little black pepper & light oil and rock salt on top.
Bake 160c 20 min or until golden brown and hard.
Tomato Water
Blend everything together and place in a jelly bag and leave in a cold room to drip into a bucket over night , the water will be clear and taste of gazpachio
Grill the Streaky bacon well on both sides, when hot pour over the maple syrup and bake for 3 minutes.
Open the Clams by splitting with a knife and then mix the peppercorns with the olive oil and lemon juice and maybe a little chopped tarragon, Lay on to a plate and spoon over the marinade.
Add a splash of frozen Vodka to the tomato water and serve with the bacon and the grissini
