Mix yellow and red capsicum, onion, ground coriander and 1/2 tbsp oil in a large baking dish.
Combine Coriander leaves, Chilli*, Garlic, Paprika, Lemon Pepper*, salt, lemon juice and remaining 1 tbsp oil in a bowl. Add chicken and toss to coat thoroughly, then place chicken in the baking tray on the vegetables.
Squeeze orange wedges over chicken.
Cook in oven for 40 - 45 minutes until chicken is cooked through and juices run clear.
Serve with crusty bread and salad.
*For a milder option, reduce Chilli &/or Lemon Pepper to 1/4 - 1/2 tsp.
