Lemon Pepper Chilli Chicken

This spicy chicken recipe is great for family dinners.

Serves 4

Ingredients

  • 1 yellow capsicum, roughly chopped
  • 1 red capsicum, roughly chopped
  • 1 red onion, roughly chopped
  • 1 1/2 tbsp oil
  • 1/2 tsp salt
  • 2 tbsp lemon juice
  • 8 skinless chicken thighs, trimmed and scored
  • 1 orange, cut into wedges
  • 1 x 12 g mccormick® recipe creations™ lemon pepper chilli chicken
  • Mccormick® recipe creations™ lemon pepper chilli chicken pack includes
  • 1 tsp ground mccormick® coriander
  • 1/2 tsp mccormick® coriander leaves
  • 1 tsp crushed mccormick® chilli
  • 1 tsp mccormick® garlic granules
  • 1 tsp mccormick® paprika
  • 1 tsp mccormick® lemon pepper

Method

  1. Preheat oven to 200ºC.
  2. Mix yellow and red capsicum, onion, ground coriander and 1/2 tbsp oil in a large baking dish.
  3. Combine Coriander leaves, Chilli*, Garlic, Paprika, Lemon Pepper*, salt, lemon juice and remaining 1 tbsp oil in a bowl. Add chicken and toss to coat thoroughly, then place chicken in the baking tray on the vegetables.
  4. Squeeze orange wedges over chicken.
  5. Cook in oven for 40 - 45 minutes until chicken is cooked through and juices run clear.
  6. Serve with crusty bread and salad.
  7. *For a milder option, reduce Chilli &/or Lemon Pepper to 1/4 - 1/2 tsp.
