Arabic Spiced Lamb, Roasted Baby Beets, Sweet Potato & Persian Fetta Salad


Serves 4 to 6

Ingredients

Lamb & Spice

  • 4 lamb loin fillet
  • 4 Cardamom pods
  • 2 Cloves
  • ½ cinnamon quill
  • 1 teaspoon cumin seed
  • 1 teaspoon Coriander
  • 2 teaspoons Garlic
  • Sea Salt & freshly ground black pepper
  • Lime 1
  • Dash of Olive Oil
  • 3 teaspoons Pistachios

Spiced Yoghurt

  • 2 tablespoons Yoghurt
  • 1 tablespoon Lemon Juice
  • 1 tablespoon fresh Coriander chopped
  • sea salt
  • brown sugar
  • garam masala

Salad

  • 200 g beetroot
  • Olive Oil thyme & garlic for roasting
  • 250 g Sweet potatoes
  • 1 Red Onion
  • 350 g sugar snap peas
  • 100 g Persian Feta cheese
  • 10 Young basil leaves
  • Rocket leaves
  • Raspberry vincotto

Method

Lamb & Spice

  1. Pound all spices in a mortar & pestle & remove cardamom husks.
  2. Add rest of ingredients and pound to chunky constancy.
  3. Rub all over lamb and marinate for at least 1 hr.
  4. Seal lamb in pan and finish cooking in hot oven till just cooked medium –rare, approx 8 to10 mins.
  5. Let it rest for a few minutes then slice and serve on top of salad

Spiced Yoghurt

  1. Combine the ingredients for the spiced yoghurt and set aside until required

Salad

  1. Boil beetroot until just cooked, the skin should be is easily removed with fingers.
  2. Drain and chop into fork size cubes.
  3. Roast sweet potato & onion in oil, thyme & garlic
  4. Blanch sugar snap peas and refresh in cold water & drain
  5. Mix all cooked vegetables together with basil and crumbled Persian fetta.
  6. Toss rocket in vincotto and place on plate, top with salad, sliced lamb and a dollop of spiced yoghurt

    These dishes look great! I really love meat based food, and I find these images quite hunger generating. I recently had some bad experiences why cooking, and I could not understand why I wasn't feeling that well. I always liked going after recipes, and cooking dishes and dishes, and I recently bought a teflon pan which found quite easy to clean and use. After some medical exams, and analisis, I found out that the problem was generated from a quite unexpected source! After researching some aspects, I found out that teflon contains a chemical called per-flouro-octanoid-acid also known as PFOA, which can cause cancer. If you over heat teflon coated pans, to 260 degrees Celsius, you get the risk of releasing that chemical...and this is a risk not worth taking. So although teflon coated pans are easier to use, they imply high risks on our health...so it is advised that they be used properly. So I want to warn you all, that no matter the dish, even indian dishes such as fish curry, garlic prawn curry, dahiwali chicken curry it is important to be very carefull when using teflon pans.

      Havent used teflon for years. use stainless steel. pour in water and simmer for a few mins after using and they will clean easy.

    Made this tonight. Very tasty indeed, but quite long to execute. You should state some cooking times and a estimate of the total time required. I took me over 2 hours to do start to finish - not a dish for weeknights.

    We tried the recipe last night - fantastic! I could only find raspberry red wine vinegar (not vincotto) but it seemed to do the trick happily. I'll try roasting the beetroot next time, as per the name rather than the instructions - it sounds like others have found this works well.

    Just cooked this last night. I was waiting for a special event because there are so many components it would take such a long time. The directions do not state the temperature of the oven and the fillets being so expensive it would be disappointing to overcook them. I had the oven at roughly 180C for 8 minutes and it would cooked perfectly medium rare and very tender. Also with the yoghurt, the recipe doesn't state quantities for the garam masala and brown sugar and so I used around 2/3 of a teaspoon each and because I love coriander I put around a handful. It was amazing and I would definitely make more of it next time. A great recipe! Will definitely make this again in the future.

    rockets are bitter CD6 ,they dont need salt and need a lot of lemon juice or cetric taste, try lemon juice with sweet orange juice or raspberry juice or any sweet juice. i alwaus add something sweet to rockets like oranges, shredded apples...etc. try it

    A real winner. Don't have Raspberry Vincotto either, but find with the yoghurt dressing is not a necessity. I use chicken as well for this dish and it's superb.

    I also don't know what Raspberry Vincotto is and found the rocket leaves to be a little bitter, I imagine the Vincotto would have sweetened them. The next time I made this dish I used baby spinich leaves instead of the rocket. This has become on of my favourite dishes and each time I make it my guests rave about it.
