Taiwan_Style Three-Cups Chicken in Hot Pot

Serves 4

Ingredients

  • 500g chicken breast (or chicken drumsticks)
  • 6 pieces of thinly sliced ginger
  • 6 cloves of garlic, peeled
  • 2 tablespoons of sesame oil
  • 2 tablespoons of soy sauce
  • 2 tablespoons shaoxing wine (or any chinese white wine)
  • 2 tablespoons of dark soy sauce
  • 20 pieces of basil leaves

Method

  1. Cut the chicken into bite size pieces
  2. Heat a clay pot on high heat and add the sesame oil
  3. Add ginger and garlic and stir-fry until aromatic
  4. Add in chicken pieces and stir-fry for 2 minutes
  5. Add soy sauce, dark soy sauce and the Chinese wine and continue to stir-fry
  6. for 1 minute
  7. Cover the pot, lower the heat and allow to simmer until the chicken is tender
  8. Add basil leaves and serve immediately
