Prawn and Mango Salad

This mouth-watering salad recipe would work as a tasty starter or a light main.


  • 400g shelled and deveined prawns or shredded chicken

  • 100g green beans, blanched and halved

  • 100g salad leaves

  • 1 mango, peeled, stoned, sliced

  • 1 cup mint leaves

  • 1 lebanese cucumber, sliced

  • ½ red capsicum, sliced

  • 100g All-Bran Fibre Toppers

  • Dressing:

  • 1 tablespoon sweet chilli sauce

  • 1 tablespoon lime juice

  • 3 teaspoons white wine vinegar


  • 1.

    Combine all dressing ingredients and set aside.

  • 2.

    To prepare the salad combine all ingredients, except the All-Bran Fibre Toppers, in a large bowl and pour over the dressing. Toss to combine.

  • 3.

    Spoon onto a serving platter and sprinkle with the All-Bran Fibre Toppers. Serve immediately.
