Chocolate Slab

Serves 8

Ingredients

  • 225 g good quality Dark Chocolate
  • ½ cup/125ml Espresso Coffee
  • 225 g unsalted butter cut into small pieces
  • ¾ cup/155g sugar
  • 4 Eggs lightly beaten

Method

  1. Heat the oven to 350°F/175°C.
  2. Grease and flour a 9-inch/23 -cm springform pan, wrapped with foil around the outside bottom to prevent leakage.
  3. Put the chocolate and coffee in the top of a double boiler and heat to melt.
  4. Stir smooth and add the butter, a few chunks at a time, until the mixture is smooth and glossy.
  5. Beat in the sugar, and cook the mixture a minute or two until hot.
  6. Beat the eggs in a bowl.
  7. Slowly pour over the chocolate mixture, whisking constantly.
  8. Pour the batter through a strainer into the pan.
  9. Bake until the cake is cooked through, about 40 minutes.
  10. Take it from the oven and cool in the pan 5 minutes, then run a knife around the edges and remove the sides of the pan.
  11. Cool completely.
  12. Wrap the cake very well in plastic and refrigerate overnight or up to two days.
  13. Take the cake from the fridge, unwrap it, and set it on plate at room temperature about an hour before serving.

      10 to 15mim prep, lining a tin took the longest the rest is to easy. 20 min max on the stove to straining into the tin. I used warm water from kettel with 1 heeped tea spoon of Nesscaff Instant for my 2nd time making this cake. Loads more kid friendley, but absolutley BEAUTIFUL. Mine is just warm to touch, start by adding about 2 tablespoons and as it mixes with the melted Chocolate add a bit more and same again and again untill 1/4 cup left then add the rest in 3 hits. This takes 10 min and works every time... We make this cake fortnightley, it's so so easy... and delicious.

    A bit of a delayed response but I tried this recipe for Easter and it was AMAZING and so easy to make! The only thing I found was that the coffee taste was quite strong, so if you're not a huge fan of coffee, maybe lessen the amount you put in?

    Sounds good, however I fear the chocolate will curdle when the espresso coffee is added to it? Please reply at your convenience.

    Won't the chocolate bind if the coffee is added to it? This is a problem I have had previously.

      just keep stiring, it will eventually combine. Even if you feel it is beyond repair. Cold coffe also helps.

    When it says to add coffee; do they mean made up as in liquid form with water only? or the actual loose powder/granules?

      Hey, just thought id reply to your question.....espresso coffee comes directly from a coffee machine so to get half a cup you may need to make several "shots" of coffee in order to get the half cup. Wait for the coffee to cool before using in the recipe :)
