Smoked Chicken and Swiss Caesar Salad

For a tasty twist on a classic salad, try this delicious recipe by South Cape Fine Foods.

Serves 6 to 8

Ingredients

  • ¼ cup egg mayonnaise
  • 2 cloves garlic, crushed
  • ½ cup french dressing
  • 4 slices stale bread, cut into cubes
  • 2 tablespoons olive oil
  • ½ teaspoon garlic salt
  • 4 rashers bacon, cut into strips
  • 200g south cape swiss
  • 1 cos lettuce, torn into bite-size pieces
  • 1 large smoked chicken fillet, finely sliced

Method

  1. Shake mayonnaise, garlic and French dressing together in a jar to make a dressing.
  2. To make croutons, combine bread cubes, oil and garlic salt together on an oven tray and bake at 200°C for 5 minutes until crisp and golden.
  3. Fry bacon in a non-stick pan on medium heat for 5-8 minutes until crisp and golden. Drain on absorbent paper. Cut South Cape Swiss into paper-thin wedges.
  4. Arrange lettuce, smoked chicken, bacon and Swiss cheese together on a large serving platter. Drizzle with dressing and top with croutons.

Notes & Tips

Tips:

• Croutons can be made up to one day ahead of time and stored in an airtight container.

• Dressing can be made up to one week ahead.

• To pack for a picnic, keep dressing and croutons in separate containers and add to salad just prior to serving.

• This recipe is also delicious with finely shaved South Cape Aged Parmesan instead of the Swiss.
