Ingredients

Method

  • 1.

Shake mayonnaise, garlic and French dressing together in a jar to make a dressing.

To make croutons, combine bread cubes, oil and garlic salt together on an oven tray and bake at 200°C for 5 minutes until crisp and golden.

  • 3.

Fry bacon in a non-stick pan on medium heat for 5-8 minutes until crisp and golden. Drain on absorbent paper. Cut South Cape Swiss into paper-thin wedges.

  • 4.

Arrange lettuce, smoked chicken, bacon and Swiss cheese together on a large serving platter. Drizzle with dressing and top with croutons.

Notes

Tips:

• Croutons can be made up to one day ahead of time and stored in an airtight container.

• Dressing can be made up to one week ahead.

• To pack for a picnic, keep dressing and croutons in separate containers and add to salad just prior to serving.

• This recipe is also delicious with finely shaved South Cape Aged Parmesan instead of the Swiss.
