Brioche Eggy Bread with Honeyed Banana and Blueberries

Follow this easy recipe for a mouth-watering brunchtime treat.

Serves 4

Ingredients

Method

  1. Cut brioche into thick slices.
  2. Whisk eggs, milk and vanilla essence together.
  3. Dip the brioche into the egg mixture, letting any extra drain off.
  4. Heat a large frying pan adding halve of the butter to medium heat.
  5. Add the eggy brioche to the pan and fry until golden brown.
  6. Cook the rest of the slices of brioche in the butter.
  7. To serve arrange the brioche on the plate the sliced banana, blueberries, honey and a dollop of mascarpone.
