Baked Field Mushrooms

Serve this rustic vegetarian dish with crusty bread for a mouth-watering starter.

Serves 4

Ingredients

  • 4 large field mushrooms, peeled and stalks removed
  • 150g soft goat’s cheese
  • 1 tbs. capers
  • 3 sprigs of thyme, leaves finely chopped
  • 95gm can sirena lemon and pepper tuna, drained slightly
  • ½ a lemon
  • 2 tbs. olive oil

Method

  1. Pre heat oven to 180 degrees C
  2. Mix the tuna, goat’s cheese, capers and thyme. Evenly distribute the tuna mixture into every mushroom cap. Drizzle with olive oil and season with a little salt and pepper. Bake for 10-15 minutes until the cheese is golden and melted slightly. Serve with a little drizzle of oil.
