Add brown sugar to spice mix and combine with honey and oil.
Place ribs into large high-sided dish (remember your going to need to get your hands dirty!) and pour marinade over the top. Massage marinade into ribs liberally until all the ribs are well coated. *This can be done 24hrs in advance if you wish*
Place a large pan or put your BBQ on high and let the ribs sizzle away for approximately 15 mins. (The ribs will blacken but don't worry this is just the sugars burning and this really is the best bit.
Tip the ribs straight into a large bowl and get them while they're hot...finger licking good!
I made these last night and served them with a Moroccan style couscous and green salad. Wow, what a fantastic summer meal. The honey and brown sugar caramelised the meat and sealed in the spices.
I made these on the weekend and was very dissapointed, I only used 500g of the ribs and more of the seasonings and marinated them for 24 hours but found them to be bland and tasteless, will not do these again.
