Fresh Cherry Salsa


Serves 4

Ingredients

  • 500g fresh cherries, pitted and roughly chopped
  • ½ small red onion, finely chopped
  • 2 tsp orange zest
  • 2 tsp coles australian extra virgin olive oil
  • 2 tsp coles italian white balsamic vinegar

Method

  1. In a medium-size bowl, combine cherries with onion, zest, extra virgin olive oil and vinegar.
  2. Stir well and stand for 15 mins for flavors to fully develop. Serve with roast pork. Always keep a fresh-fruit-based salsa refrigerated after you’ve made it.
