Use a mandolin to finely julienne the pears and apples. Place in a bowl and squeeze over half a lemon to stop the fruit from browning. Toss to coat in the lemon juice and mix the fruit.
Add in the cheeses, and toss to mix.
Squeeze the apple and pear cores to extract the remaining juice, and use as a dressing. Serve.
