Pear, Apple and Cheese Salad

As kids my mum would make my brother and I a big platter of pear, apple and cheese. Years later it is my favourite fresh salad.



  • 1.

    Use a mandolin to finely julienne the pears and apples. Place in a bowl and squeeze over half a lemon to stop the fruit from browning. Toss to coat in the lemon juice and mix the fruit.

  • 2.

    Add in the cheeses, and toss to mix.

  • 3.

    Squeeze the apple and pear cores to extract the remaining juice, and use as a dressing. Serve.


You could add rocket or baby spinach to make it more substantial.
