I made this yesterday for breakfast after a very intensive Bikram session. The delicious ripe mango, coconut and nuts with the fresh hint of mint was so cooling and satisfying. I think I'll be eating this fairly regularly over the Summer!
Place the mango in a bowl. Dolop on the yoghurt and coconut milk (or cream). Sprinkle over chopped up nuts, mint and coconut.
Sit in the sunshine and eat happily!
