Perfectly Poached Chicken


Enjoy chicken the healthy way, with this recipe for perfectly poached chook fillets.

Ingredients

  • 2 chicken breast fillets, skin & fat removed
  • lemon, cut in half
  • 3 cloves of garlic
  • 1 tsp salt

Method

  1. Place chicken fillets and flavourings in a medium saucepan and cover with cold water
  2. Bring to the boil, reduce heat to a gentle simmer, cover and continue cooking for 6 minutes.
  3. Remove from heat and stand for 10 minutes

Notes & Tips

Tip: It’s worth poaching a few chicken fillets at the beginning of the week to use for sandwiches, wraps, pizzas and salads. To vary the flavour, add different herbs and spices eg. bay leaves, bouquet garni (or sprig of thyme, rosemary & parsley), onion, chilli, lemon grass, coriander seeds and stalks, ginger, chilli, soy sauce, star anise etc.
