Flounder with Salmoriglio


Salmoriglio is a simple Calabrese and Sicilian condiment of olive oil, salt, garlic, oregano, parsley and lemon, often used as an easy delicious sauce for seafood.

Ingredients

  • 2 flounder 700 gram
  • 150 ml extra virgin olive oil
  • watercress

Salmoriglio

  • 200 ml extra virgin olive oil
  • 1 clove garlic
  • 1 tablespoon caper
  • 1 lemon juice & zest
  • salt flakes
  • Ground black pepper
  • ½ bunch oregano
  • 6 sprigs italian parsley
  • 1 small red chilli finely sliced & seeds left in

Method

  1. Pound Extra Virgin Olive Oil, garlic, capers, lemon zest and juice, salt flakes, pepper, oregano, parsley and chilli in a mortar and pestle until a paste forms.
  2. Fillet the flounder (or leave whole) and pan sear in the olive oil.
  3. Serve with the salmoriglio smeared on top of the fish and finish with watercress.
