A delicious dessert idea to satisfy the sweet tooth!
Roast hazelnut, rub skins off, put in food processor and blend with castor sugar, lemon zest, cinnamon, calvados, vanilla, 1 tbls butter and egg .
Blend to a smooth paste. Spread over puff pastry.
Put peaches in boiling water for 30 seconds then remove and refresh in cold water, peel, halve, deseed and cut slices. Peel, core and cut slices from apple and then put in bowl with peach slices, add some soft brown sugar and a little brandy allow to soak for 20 minutes.
Lay slices of apple and peach alternately around the pastry, dot with butter and a sprinkle of mint.
Bake in hot oven 200 for 25 minutes.
Serve with ice cream.
