Morello Cherry Clafouti

Enjoy this cherry dessert with your favourite ice cream, yoghurt or whipped cream!

Ingredients

Method

  1. Sift the flour, sugar and salt together then add and mix through the almond meal.
  2. In a separate bowl whisk the eggs, egg yolk, milk, cream and port together.
  3. Gradually incorporate the flour mix into the milk whisking all the time until you finally have a smooth liquid batter.
  4. Set this aside while you pit the cherries.
  5. Once the cherries are pitted butter an oven proof dish and scatter them around the dish – the bottom should be completely covered.
  6. Whisk the melted butter and the lemon and orange zests into the batter and carefully pour the mixture over the cherries.
  7. Place the dish into a preheated oven and cook at 170° for about 50 minutes.
  8. The Clafouti should be firmish to touch and browned on the top, it should also wobble in a firm way.
  9. Serve with good ice cream, yoghurt or some whipped cream.
