Fruit Soup with Feta


Fruit Soup with Feta

Enjoy the tasty delights of this fruit soup recipe.

Ingredients

  • 4 dragon fruit – one red and three white
  • 2/3 of ¼ of watermelon
  • Juice of 2 ½ oranges
  • 1/3 cup of castor sugar
  • 1 bunch of fresh mint
  • Juice of one lime
  • 1 cup of prosecco – italian dry champagne
  • Greek feta – optional finely diced

Method

  1. Heat orange juice, sugar and several mint leaves in a pot until the sugar is dissolved, pour into a bowl and sit the bowl in ice or in the freezer to cool.
  2. Remove fruit from the dragon fruit and water melon – you should have equal amounts and blend in a blender until pureed pour into a bowl.
  3. Add about 11/2 tbls spoons of chopped mint to the fruit puree then add the strained chilled orange juice, the Prosecco and the lime juice. Taste and adjust where necessary.
  4. Ladle into a soup bowl and scatter with finely diced feta.
  5. Garnish with a mint leaf.

Notes & Tips

Tip: You want to use a Greek feta due to its saltiness and crumbly texture. If you real hate the idea of a fruit soup and even more so a fruit soup with feta cheese in it then this makes a great granite, just chuck it in you ice cream maker and freeze it. When it is nice and frozen serve it in a martini glass with a mint leaf on the top.
