A tasty seafood sandwich dish. Try it as a snack or a light meal.
Heat up a cast iron skillet or sauté pan to medium heat
Add some olive oil, butter or both
Toss in your onions, garlic and freshly slice chilli
Cook stirring occasionally until the onions begin to turn golden
Remove from the pan and hold
With a cloth just wipe out the pan then place back on the heat so it gets really hot
Take your thinly sliced Paua and pour some oil through it, then place in the hot pan
Let it sear for 30 seconds the move it around for another minute or so
Season with salt and pepper and give it a good squeeze of lemon juice
Stir in the cooked onions
On buttered bread, divide out the paua, add the rocket leaves then top with another slice of bread
‘Eat em while there hot’!
This is a great way to eat the Paua directly from the sea. All you need are the ingredients a heavy skillet or sauté pan, a sharp knife and chopping board and a small fire. Alternatively use a BBQ.
