A Fish named Mags


Ingredients

FISH

  • 1 whole Fish
  • 2 Limes sliced
  • 1 tablespoon Ginger grated
  • Coriander
  • Garlic
  • Olive Oil

COCONUT VEGIES

  • 1 cup Coconut cream
  • 1 sliced Potato
  • 1 handful snow pea shoot
  • 1 Spanish Onion
  • 1 tablespoon Ginger
  • 1 Garlic Clove

FRUIT PARCEL

  • 1 Pear
  • 1 handful strawberry
  • 1 tablespoon Honey

Method

FISH

  1. Scale, gut and fillet fish.
  2. Place fish on baking paper and cut 3 cuts in fish and cover with sliced lime, ginger, garlic and coriander sprinkle with olive oil and place on BBQ for approx 20 minutes.

COCONUT VEGIES

  1. Place all vegies in a wok and stir fry for approx 10 minutes and then pour 1 cup coconut cream and let reduce
