Mince your beef and put it into a bowl with very finely chopped pancetta and prosciutto, bread crumbs, tomato sauce, Worcestershire sauce, salt/pepper (being careful not to add too much salt), then mix all ingredients along with 1 egg to bind it all together then leave refrigerated.
FLAT BREAD
Meanwhile make your bread by putting your flour into a large bowl with a pinch of salt a teaspoon of granulated yeast and warm water (blood temp). Form into a smooth pliable ball and kneed for a couple of minutes - set aside.
Cook your flat bread with some oil lightly brushed over them, then place some blue cheese on top of a piece of bread (on the hot plate) and let melt slightly.
BEETROOT RELISH
Cut the beetroot very thinly then into dice, then place in a bowl.
Season and douse in a splash of vinegar.
CHIPS
Cut potatoes into uniform lengths and 'blanch' in hot oil (be careful as it may splash) for around 5 mins.
Take the chips out with a slotted spoon and drain on paper.
Turn up the heat under your oil (for the chips) and do a second cooking to make them crisp.
ASSEMBLING THE BURGER
When it’s time to cook, form patties with your burger meat and cook on the flat plate of your BBQ, along with your bacon rashes.
Place a piece of bread (with the melted blue cheese) on your plate, followed by your meat patty, some beetroot relish another piece of bread some rocket and another piece of meat.
