Acar (Mixed Vegetable Pickle)
In a large stainless steel pot, combine vinegar and water. Bring to a boil.
Add the vegetables in the following order – cabbage, carrots, cucumber, snake beans.
Stir to make sure the vegetables are mixed well in vinegar solution.
Turn off the heat as soon as the last vegetable is added. Cover with lid for one minute.
Strain the liquid from the pot and discard.
Add sugar, salt, chilli flakes, turmeric, garlic and belacan to the vegetables and mix well.
Adjust seasoning as desired.
Add crushed peanuts and sesame seeds.
Allow to chill before serving.
Makes 12 serves. Keeps well in refrigerator.
