Acar (Mixed Vegetable Pickle)

Ingredients

  • 2l white vinegar

  • 2 cups water

  • ¼ cabbage, cut into 2cm strips

  • 2 carrots, peeled, cut into thin 5cm long sticks

  • 6 cucumbers, cored (seed removed) cut into thin 5cm lengths

  • 1 cup snake beans, tips removed, cut into 5cm lengths

  • 1 cup sugar

  • 1 tbsp salt

  • 2 tbsp chilli flakes

  • ½ tbsp turmeric powder

  • ½ tbsp minced garlic

  • 2 tbsp belacan (shrimp paste) granules

  • 2 cups skinless peanuts, roasted and crushed

  • ¼ cup sesame seeds, roasted

Method

  • 1.

    In a large stainless steel pot, combine vinegar and water. Bring to a boil.

  • 2.

    Add the vegetables in the following order – cabbage, carrots, cucumber, snake beans.

  • 3.

    Stir to make sure the vegetables are mixed well in vinegar solution.

  • 4.

    Turn off the heat as soon as the last vegetable is added. Cover with lid for one minute.

  • 5.

    Strain the liquid from the pot and discard.

  • 6.

    Add sugar, salt, chilli flakes, turmeric, garlic and belacan to the vegetables and mix well.

  • 7.

    Adjust seasoning as desired.

  • 8.

    Add crushed peanuts and sesame seeds.

  • 9.

    Allow to chill before serving.

Notes

Makes 12 serves. Keeps well in refrigerator.
