Damper Burger with Relish & Sweet Potato Chips

Here's Sophies Semi Final winning Burger.

Ingredients

BURGER PATTIE

  • pancetta or Bacon all fat intact
  • fatty cut of Beef the pattie needs moisture this is attained by the beef fat
  • Onion
  • Flour to bind
  • 3 Eggs

SWEET POTATO CHIPS

  • 3 Sweet potatoes
  • 2 L Water
  • 1 Bay leaf
  • Rosemary
  • Thyme

RELISH

  • 4 Tomatoes
  • Garlic
  • brown sugar
  • red wine vinegar
  • finely diced Red Onion
  • Salt
  • Pepper
  • Soy sauce

Method

BURGER PATTIE

  1. combine all ingredients.
  2. Make into patties.

DAMPER BUN

  1. Make well with 3 cups of flour add 100 grams of melted butter.
  2. Add milk until a dough-like consistency like is reached. Add lots of salt and pepper.

SWEET POTATO CHIPS

  1. Cut sweet pots into desired shape or cut.
  2. Bring to boil with some herbs just to bump up flavour.
  3. Cook until knife easily passes through.
  4. Then pat dry.
  5. Deep fry in oil.
  6. Add salt before serving.

RELISH

  1. This is a basic relish recipe. The idea of this is to balance sweet with salty with sour. So it’s all to taste.
  2. Cook tomatoes on heat with olive oil until mushy.
  3. Add onion.
  4. Add garlic and sugar and let sugar dissolve.
  5. Add soy for a deeper colour.
  6. You wont taste the soy, it just turns up the volume on the other flavours.

In Burger add rocket for colour and anything else u may want.
