Melt the butter in a large pot over a nice medium heat. Add the onions, leeks and potatos. Saute gently for 2 -3 mins. Add the stock, bring to boil, then reduce to a low heat and simmer for 15 mins.
Remove from heat and liquidize the soup using a hand held stick blender if you have one.
Heat the soup, season to taste with the salt and pepper and serve in bowls. swirl using the cream, if using, garnish with the parsley and serve with the bread.
