The dish is a lovely starter to any meal. It is a warm, messy meal that is vegetarian friendly and is a wonderful way to capture all the flavours of the tomato.


  • tomatos x 15 medium sized/any type

  • avocado diced/spread x 1

  • smoked salmon (optional) x 2 300g pack

  • ciabatta/turkish bread x 2 loaves

  • baby capers x 1 110g jar

  • shallot bunch x 1

  • herbs from masterfoods-around 5 shakes of each-

  • basil

  • rosemary

  • oregano

  • parsley

  • thyme

  • red onion x 1

  • garlic x 1 clove


  • 1.

    Heat the oven top to a medium degree and dribble one spoon full of virgin oil in the pan and put the pan on the oven top

  • 2.

    Cut the bread in half and put them in the toaster and cook them so they are golden and crunchy - 2 min 30 secs

  • 3.

    Cut the tometos in quarters and set them aside.

  • 4.

    Peel the onion and cut it in half then finely dice it. Set it aside with the tomatos.

  • 5.

    Mix the tomatos and onions together in abowl. Add the herbs and place in the pan stir it through at a medium tempreture.

  • 6.

    Take the garlic cloves and rub on the bread till suitable flavour.

  • 7.

    Keep stiring the tomatos. Dice the avocado and set aside.

  • 8.

    After warming them through add the avocado to the tomato and put in a bowl.

  • 9.

    Place the salmon on the bread until the top of each piece of bread is covered with salmon and then add a few capers.

  • 10.

    Finly chop the shallots.

  • 11.

    Spoon the tomatos onto the salmon and add the shallots on top. Congratulations you have successfully made Bruschetta!!!
