A hearty salmon dish that's perfect for dinner.
Preheat oven to 200°C.
Place fillet on a non stick tray or baking paper. Poke tiny holes in the salmon with a fork just in the centre and the ends, then sprinkle with pepper and brush with a tablespoon of olive oil. Juice half a lemon and pour over the salmon with a few slices to place on top.
Bake 12-15 minutes, until salmon flakes easily.
Heat the oil in a large non-stick frying pan over a medium heat.
Add the onion 5 minutes or until the onion is softened.
Stir the cabbage and vinegar. Cover and cook for 4 minutes or just until the cabbage wilts. Uncover the pan and increase the heat to high.
Add the apples and honey.
Cook, stirring frequently, for 4-6 minutes or until the apples are tender but crisp and most of the liquid has evaporated.
Transfer to a serving dish and top with walnuts, if using.
