5 Veggies in 10 Minutes

A tasty and healthy dinner meal in minutes.

Ingredients

  • snow peas – sliced in half

  • red capsicum – cut in fine strips

  • carrots - cut in fine strips

  • broccoli – small florets

  • bean shoots - washed

  • coriander - chop 1 bunch

  • ginger – finely chopped

  • chilli – finely chopped

  • garlic – finely chopped

  • tamari soy sauce

  • extra virgin olive oil

  • water – ¼ cup

Method

  • 1.

    Sauté garlic, ginger and chilli in extra virgin olive oil for 1 minute.

  • 2.

    Add all vegetables (except bean shoots and coriander) and water, toss then cover for 3 minutes and continue cooking.

  • 3.

    Add tamari, bean shots & coriander and mix well.
