Scrambled Silken Tofu with Vegetables

Start the day with this healthy breakfast meal.

Method

  1. Cut red onion and celery into small pieces.
  2. Heat a pan to a medium heat, add onion and celery and allow to cook for 1 minute.
  3. Add tofu, tomatoes and spinach and stir for 2 3 minutes, allow to rest for 1 minute in the pan then serve.
