Cinnamon Stewed Fruit with Quinoa/Amaranth Porridge

Start the morning with this sweet and healthy breakfast treat.

Ingredients

  • ½ cup dried fruit or 1 cup fresh fruit

  • 1 cup water

  • 1 teaspoon ground cinnamon

  • 1 desert spoon honey

  • 1 cup of white quinoa/amaranth flakes

Method

  • 1.

    Combine all ingredients except flakes and simmer for 10 minutes in a covered pot.

  • 2.

    Turn off the heat and add the flakes while the pot is hot, cover for 5 minutes then stir.

  • 3.

    Place in a bowl with a dash of milk to finish

I would like to know too? Some of the recipes are obviously more than one serving and it would be good if you could update them to advise how many servings per recipe.
