Lentil and Vegetable Patties

Treat yourself to this nutritious pattie snack.

Ingredients

Method

  1. Pre heat oven to 180 degrees.
  2. Cut the onion into small cubes about 2mm.
  3. Peel carrot and cut into small cubes approx 1/2 cm then microwave in water for 4 minutes, allow the carrots to cool.
  4. Drain and rinse the corn and lentils.
  5. Add all ingredients to the mixing bowl and mix with a fork.
  6. Roll patties into balls approx 5cm. Place in a baking tray lined with baking paper.
  7. Gently flatten the balls until approx 2 cm thick.
  8. Place in the oven and bake for 40 minutes.
  9. Allow patties to cool for 20 minutes after cooking.
