Immune Boosting Soup


Immune Boosting Soup

Boost your energy levels with this deliciously healthy soup.

Ingredients

  • 600g chicken thighs
  • 1 litre chicken stock
  • 1 brown onion – sliced finely
  • 6 cloves garlic – sliced finely
  • 1 inch fresh ginger – sliced finely
  • 1 -2 chilli – sliced finely, ensure you add the seeds for their heat
  • 200g enoki mushrooms
  • 80g risoni pasta
  • Zest and juice of 2 lemons
  • Parsley

Method

  1. Sauté onions, garlic, chilli, ginger until soft.
  2. Add chicken thighs and brown them.
  3. Pour in your stock and simmer.
  4. Once chicken is cooked take it out and shred with a fork.
  5. Add chicken back in with risoni and Enoki mushrooms.
  6. To serve, place lemon zest on the bottom of your bowl.
  7. Add soup and top off with lemon juice and parsley.

    This soup is really delicious! Just wondering if someone could give me an estimate of how many calories there would be in total/in a 1 cup serving??

      I worked out that it would be roughly 1080cal for the lot but I would make one change (which this number reflects) - and that's to use 80g of vermicelli noodles instead of risoni. Also hard to know exactly how much a chicken thigh weighs as it can vary a lot, but this is based on a 52g thigh fillet x 6. I can't quite find in the recipe how many it serves, but based on 4 people, it would be 270 cal each, or based on 6 people, it would be 180 cal per serve. Hope that helps! I think I'll be making it as I'm doing the 5:2 diet and am on the lookout for very low cal tasty meals!
