Chicken and Pineapple salad


Serves 6 to 10

Ingredients

Method

  1. Boil a pot of water (enough to completely cover the chicken and a little over it) with salt and black peppercorns. Turn down the heat and poach the chicken on low heat for 20-25 minutes or till it is properly cooked but not overdone. Let it cool down to room temperature, remove the chicken and cut it in 1-1.5 inch long pieces.
  2. Cut the pineapple into 2 inch pieces and gently mix it in with the chicken. Squeeze lemon juice over it and refrigerate.
  3. Whisk the yoghurt and mayonnaise together and pour it over the chicken and pineapple mixture
  4. Add extra salt and/or ground white pepper if required
  5. Garnish with coriander and serve.
