Salt & Pepperleaf Prawn and Crocodile

Another great recipe that incorporates crocodile and prawns.


  • 6 Tiger Prawns

  • Tail fillet of Crocodile (cubed)

  • Potato Starch (or Cornstarch if unavailable)

  • Ground Pepperleaf

  • Oil

  • Sesame Oil

  • Pinch of Sea Salt

  • 2 tbs Sambal Oelek

  • 2 gloves Garlic puree

  • Vietnamese Pickle Salad

  • Lemon

  • Salt

  • Garlic

  • Corriander

  • Chilli

  • Selection of Asian veg eg. Chinese Cabbage, Capsicum, carrot- shredded.


  • 1.

    Combine the marinade ingredients together to taste.

  • 2.

    Toss through the shredded Asian veg.

  • 3.

    Set aside.

  • 4.

    Coat prawns and Crocodile in potato starch.

  • 5.

    Place them in deep frying oil. (pop the prawns in first and the crocodile meat second)

  • 6.

    Cook up for a couple of minutes and then place on a tea towel to drain the oil.

  • 7.

    Heat up a dash of sesame oil in a wok, add the Sambal Oelek, Puree Garlic and cook for 30 seconds.

  • 8.

    Add the deep fried prawns and crocodile.

  • 9.

    Toss well- add a pinch of sea salt and Native Pepperlead- Toss thoroughly.

  • 10.

    Serve with the Vietnamese Pickle & Garnish with coriander.
