Flaming Oranges


Flaming Oranges

This is a great dessert to try with friends.

Ingredients

  • 5 oranges, peeled, cored and quartered
  • Fresh mint finely sliced plus some whole leaves
  • Pinch cardamom powder
  • ½ tsp cinnamon powder
  • One cinnamon stick
  • 2 whole cloves
  • 200g of raw sugar
  • 200 ml of water
  • Grand marnier

Method

  1. Make a sugar syrup by combining the sugar and the water and heating over a flame until the sugar has melted then bring to a simmer and cook for several minutes.
  2. Turn off the flame and allow the syrup to cool.
  3. Once cool put in the spices and mint and whisk to combine then put in the orange pieces and mix again.
  4. Allow to steep for a couple of hours.
  5. Remove orange pieces and stack about six to eight pieces on a plate.
  6. Then take a ladle, pour in some Grand Marnier and hold over a flame gently heating the liquor. It will eventually light and begin to burn when this happens pour over the oranges and watch as they “flame”.
  7. Serve with vanilla ice cream.
