Crunchy salmon patties

A quick and easy microwave recipe that the whole family can enjoy!

Ingredients

  • 2 cans boneless salmon, drained
  • 1 cup cornflake crumbs
  • ½ cup mayonnaise
  • 1 egg
  • 2 tablespoons sliced green onion (shallots)
  • ½ teaspoon mustard

Method

  1. In a medium mixing bowl, combine salmon, half of the cornflake crumbs, mayonnaise, egg, green onion and mustard.
  2. Shape into four patties.
  3. Place remaining cornflake crumbs in a bowl. Coat each patty evenly in crumbs, pressing lightly to coat both sides.
  4. Arrange patties in a square casserole dish. Cover with microwave-safe plastic wrap. Microwave on high for 4½ to 6 minutes or until firm and hot, rotating casserole dish once.
  5. Brown the patties in a lightly-oiled pan.
  6. Serve salmon patties topped with tartar sauce, if desired.
