Chick Pea Salad

Low calorie Salad great with meat or fish

Ingredients

  • 1 can of chick peas, drained
  • 2 bunches asparagus , chopped into 2cm lengths, steamed
  • 1 punnet cherry or grape tomatoes , halved
  • 1 lebanese cucumber chopped into 1 cm squares
  • 6 spring onions chopped into 1 cm pieces
  • Dressing
  • Low fat natural yoghurt , small tub
  • 1 tablespoon chopped mint plus a little more for garnish
  • Mix together

Method

  1. Add all salad ingredients in a bowl with the chick peas
  2. Mix yoghurt and mint together
  3. Pour the dressing over the salad. Do not stir
  4. Put the reserved mint as a garnish on top
  5. Enjoy
