Broccoli Fried Rice

A simple fried rice that uses broccoli in it.This is a perfect lunch box dish.

Ingredients

  • basmati rice-1 cup cooked

  • broccoli-1 cut into florets

  • eggs-2 beaten

  • onion-1 chopped finely

  • garlic-5 cloves chopped

  • ginger-1 inch piece minced

  • soya sauce-1 tblspn

  • vinegar-1 tblspn

  • pepper-1 tsp

  • sugar-1 tsp

  • salt to taste

  • coriander leaves / spring onion- for garnishing

Method

  • 1.

    In a kadai heat oil and scramble beaten egg till done and remove it and set aside.

  • 2.

    Heat oil in a kadai and fry some garlic and ginger.Add in onions and fry for 1min.

  • 3.

    Add in salt and sugar..Put in the broccoli florets and mix well.Cook for 5 min.

  • 4.

    Add in the cooked basmati rice and mix well.

  • 5.

    Throw in the scrambled eggs and mix well.

  • 6.

    Add in vinegar and soya sauce and mix well.Throw in pepper and toss well.

  • 7.

    Garnish with coriander leaves and mix well...

  • 8.

    Serve hot..
