Fig Pancakes

This recipe is from episode 30 of Good Chef Bad Chef series 3.


  • To serve


  • 1.

    Mix flour, eggs, sugar & milk together in a bowl until smooth (no lumps).

  • 2.

    Stand aside to rest for ½ hour. Add more milk if you wish to make the batter of a thinner consistency.

  • 3.

    Place a knob of butter in a pan, on low to medium heat.

  • 4.

    In a separate pan melt a knob of butter, heat figs and syrup on a medium heat.

  • 5.

    Cook the pancakes until golden brown and cooked on both sides.

  • 6.

    Remove pancakes from the heat and fill with figs.

  • 7.

    Turn over.

  • 8.

    Serve with ice cream, whipped cream, sprinkle with icing sugar.


Yield = 1.2L (15 x 2 oz ladles)
