Mexican Soft Tortilla Tacos, Spiced Beef, Salsa

This recipe is from episode 26 of Good Chef Bad Chef series 3.

Ingredients

Sauce

  • 1 kg diced beef, rump steak
  • 6 medium tomatoes , peeled, seeded & finely chopped, or passata
  • 100g finely chopped onions
  • 1-½ tsp dried oregano
  • ½ tsp finely chopped garlic
  • 6 tbsp red-wine vinegar
  • Scant tsp sugar
  • Scant tsp salt
  • 500 ml refried beans, 1 tin kidney bean, drained and fried in oil till crispy
  • 4 tbsp olive oil
  • 5 tsp red-wine vinegar
  • 80g butter
  • ¼ tsp salt
  • Shredded lettuce
  • 12 tortillas
  • 100 g coarsely chopped onions
  • 50 g freshly grated tasty cheese
  • 4 jalapeño chilies, finely diced

Salsa

Method

  1. In a pan, heat cayenne pepper, cumin, olive oil, diced beef on a high heat.
  2. Add salt to taste. Slowly add garlic, onion, refried beans and add butter to taste.

Method Salsa

  1. In a bowl, mix red onion, avocado, lime juice, olive oil and herbs.
  2. Wrap cheese, meat and salsa together in a tortilla.

    Someone's made a boo-boo - there is no cayenne pepper in ingredients list but it's referred to in method. 2 recipes confused?

    Looked sooo nice on TV, but this recipe seems a bit incomplete. How long did Adrian cook the beef mixture for and what about the extra ingredients listed above, do they go in with the beef?
