Algerian Chicken Cooked with Figs, Almonds and Pistachios

This recipe is from episode 24 of Good Chef Bad Chef series 3.


  • 1 onion, diced

  • Olive oil

  • 1 bay leaf

  • 3 cloves garlic

  • 1 knob ginger

  • 1 cinnamon quill

  • 1 tab cumin

  • 2 cloves

  • 4 cardamom pods

  • Olive oil

  • 4 breast of chicken with the skin on

  • 1 orange

  • 1 cup dried figs, stem removed

  • ¼ cup flaked almonds

  • ¼ cup pistachio nuts

  • ½ bunch coriander

  • ½ bunch parsley

  • 1-liter chicken stock

  • 1 pkt cous cous


  • 1.

    In a medium pot add oil over a medium heat. Add onion.

  • 2.

    Sweat with garlic, ginger, cinnamon, cumin, cloves, seal chicken in pot add remaining ingredients and simmer.

  • 3.

    20 – 30 mins gently until chicken is moist and tender.

  • 4.

    Serve with light fluffy cous cous or rice.

very dissapointed with this recipe.i watched the show before hand. ingredients missing, method very unclear. was very sweet, won't be making again

Love the show and I'm glad I'm on holidays so that I can watch it. I was happy I wrote the recipe down on paper while watching, as all the ingredients are not shown in your recipe above. Some people would be confused with the method also, if they are not use to cooking some of these recipes. You have not separated the method and ingredients to the couscous!! Could be disaster for some!

Would you please supply recipe from show 28/12/11. This recipe is very different to the show. No passata, no mention of how he did the couscous, no dates, no prunes etc etc

Hi Lyndell4. I have just cooked this recipe. With the couscous it's 1 x cup couscous, 1 cup chicken stock (hot), currents, pine nuts (I would roast these first) and 1 Tablespoon olive oil. Mix all together and cover. Add the following the the recipe above. 1 Tbs Turmeric grated (I couldn't buy fresh, so I used dried), 1 tomato diced, 1 T tomato paste, handful prunes, dried dates, orange peel, juice 1/2 orange, 1 carrot sliced. I used sliced chicken breast filets and 1 cup chicken stock and simmered for 25 minutes. YUM!! If you like couscous, you can add, roasted sweet potato, some lemon juice and freshly chopped mint and extra currents. Good luck! Jen

On the show I have just watched, Adrian used Tomatoes in this dish, yet they are missing here. Should tomatoes be used and if so what quantity?
