Steamed Italian Fish

This recipe is from Episode 15 of Good Chef Bad Chef Series 3

Serves 2

Ingredients

  • 2 x 150g barramundi fillets
  • 4 tomatoes , diced
  • 1 handful olives, pitted
  • 1 handful basil
  • 2 garlic cloves
  • ½ cup char-grilled capsicum cut in thin strips
  • 1 tbsp preserved lemon, julienned
  • ½ cup each of red and white quinoa, cooked

Method

  1. Steam Barramundi fillets, tomatoes, olives, basil, garlic, capsicum and lemon together in a bowl in a steamer basket.
  2. Serve with red and white quinoa.
