This Greek-inspired dish from Adrian Richardson is an a delicious and easy lunch idea.
Mix together cucumber salad and 2 tbsp salt. Leave overnight on covered tray.
Mix together yoghurt and salt and hang in cloth overnight. Drain excess liquid from the cucumber. Add yoghurt and garlic. Season if needed. No pepper.
Mix all ingredients together. Cover & refrigerate.
Roll ingredients into cylinders and fry until brown. Remove from pan and roll up in flatbread with tomato, lettuce and tzatziki.
