Saffron poached pear

Serves 6

Ingredients

  • 6 firm pears
  • 1 pinch saffron
  • 2 cup sugar
  • 2 cardamom pod
  • 1 cinnamon quill
  • 4 allspice
  • 1 star anise

Method

  1. Peel pear leaving stem on. Core pear.
  2. Place all ingredients in pot and add water until pears are covered. Poach until pears are just cooked. Remove from heat and allow pears to cool in liquid.
  3. Reduce liquid to a glaze to make lovely syrup.
