Dry spiced beef skewers (rump), with bay leaves and garlic


This recipe is from Episode 6 of Good Chef Bad Chef Series 3

Ingredients

  • 500g rump, cut into cubes
  • 20 bay leaves
  • 20 garlic cloves

Rub

  • 1 tsp ground black pepper
  • 1 tsp cayenne pepper
  • 1 tbsp chili powder
  • 2 tbsp ground coriander seed, toasted
  • 1 tbsp dried oregano
  • 2 tbsp smoked paprika
  • 1 tbsp salt
  • 1 tsp ground white pepper

Method

  1. Create a marinade using cayenne, chilli powder, pepper, paprika and vinegar. Coat meat in this marinade and allow to sit for an hour.
  2. Slide beef on to skewer. Rub with a little oil and grill.
