Quail Medallions in Paprika Cream Sauce with Garlic and Mushrooms


  • 400g Game Farm Quail Medallions

  • 240g mushrooms, sliced

  • 2 cloves of garlic, roughly chopped

  • 1 medium sized brown onion, diced

  • 4 teaspoons paprika (season to taste)

  • 400ml cream

  • 40ml vegetable oil

  • 40g butter

  • Salt and pepper to taste

  • 4 serves of blanched green beans


  • 1.

    Heat oil in a fry pan.

  • 2.

    Season Game Farm Quail Medallions with salt and pepper, place into the pan and cook gently until just cooked, take out and set aside.

  • 3.

    Add butter to the pan, once butter is melted add onions and garlic, cook for one minute before adding mushrooms. Cook for a further three minutes and then add paprika and cream.

  • 4.

    Simmer until sauce thickens, add Game Farm Quail Medallions, heat and serve.

  • Variation::

  • 1.

    Serve on a bed of green beans or with fresh salad, rice or soft polenta. Variation: Try using half sweet paprika and half smoked paprika.
