Lentil and Bacon Soup


Easy, hearty, yummy, comfort food.

You can add carrots or other vegetables but I think the flavours of the bacon, tomato and lentils suffice.

Ingredients

  • About 300 g green or brown lentils
  • Olive oil
  • 1 bacon hock or a few smoked bacon ribs
  • 1 large clove garlic, chopped
  • 1 red chilli (or more to taste) chopped
  • 2 - 3 tablespoons tomato paste
  • 1 onion, finely chopped
  • 1 stick celery, chopped
  • 2 fresh tomatoes , chopped
  • 1 tin diced tomatoes
  • 2 bay leaves
  • 2 - 3 litres home made chicken stock
  • Handful fresh basil leaves
  • Freshly ground salt and pepper

Method

  1. Heat olive oil in large heavy based pan. Fry onion, celery, garlic and chilli for about 5 mins over a gentle heat until softened
  2. Add tomato paste and cook for about 2 - 3 minutes
  3. Add lentils and stir well to coat in tomato mixture
  4. Add fresh tomatoes and cook for about 2 - 4 minutes
  5. Add bacon hock or ribs, tinned tomatoes, bay leaves and stock and stir to combine. Season with salt and pepper. Bring to a gentle simmer and cook for about 2 hours, stirring from time to time. Can be cooked less but I find the longer you simmer the richer the flavour.
  6. Finish by scattering fresh basil leaves, season to taste and serve with hot, crusty bread.
