An Original Anzac Biscuit

Serves 35

Ingredients

  • 1 x cup each of plain flour, sugar, rolled oats and coconut
  • 4 x ounces butter 115g
  • 1 x tablespoon treacle (golden syrup / cockies joy)
  • 2 x tablespoons boiling water
  • 1 x teaspoon bi-carbonate soda

Method

  1. Grease biscuit tray pre heat oven to 180C.
  2. Combine dry ingredients.
  3. Melt together butter and golden syrup.
  4. Combine water and bi-carbonate soda - add to butter mixture.
  5. Mix butter mixture and dry ingredients.
  6. Drop teaspoons of mixture onto tray allowing room for spreading.
  7. Bake for 10-15 minutes or until golden.
  8. Allow to cool on tray for a few mintes before transferring to cooling racks.
