Artichoke dip


Rich, creamy and very addictive.

Serves 6

Ingredients

  • 2 jars of marinated artichoke cut into ¼ pieces (always fresh brand)
  • 4 strips bacon- rough chopped
  • 1 lrg brown onion rough chopped
  • 75 grms sun dried tomatoes chopped
  • 3 cloves garlic
  • 1 lrg cup whole egg mayonnaise
  • 2 tbls dijon mustard
  • 1 pkt parmesan cheese
  • 3/4 cup crumbed blue cheese
  • ½ lemon juice
  • Hot smoked paprika
  • pepper
  • Chopped parsley to garnish
  • French loaf bread, turkish bread or vienna (toasted tastes better)

Method

  1. Lightly fry Bacon, onions, garlic and allow to cool.
  2. In a bowel add fried ingredients, Artichoke, Sun dried tomatoes, Mayonnaise, Dijon mustard, Parmesan cheese, Lemon juice,
  3. Pepper and combine gently.
  4. Spoon mixture into a baking dish (Bowel), add blue cheese on top and sprinkle with Paprika.
  5. Bake in oven 190 deg for 20-25 minutes until mix starts to simmer.
  6. Remove sprinkle with Parsley and serve with crusty bread.
  7. Place baking dish on large serving plate and arrange quartered toasted Turkish bread or French load piece around the dish.
  8. Spoon mixture onto piece as required.
